Hello from Delicious Portland

Just a quick note to let you know we're thoroughly enjoying our first visit to Portland. As we'd heard, they take their food (and apparently everything else) very seriously here. The photos below are from an amazing dinner we had at Le Pigeon (sorry, cell phone shots). By the way, the foie gras profiteroles (yes, you heard me) were topped with a perfectly made caramel sauce, which will be the new video recipe post on Monday. Stay tuned!

Rabbit and Eel Terrine. Peaches, Avocado, Foie Gras Miso Vinaigrette.
Halibut, Uni, Grapes, Champagne Sauce.
Foie Gras Profiteroles, Caramel, Sea Salt.

Welcome to Portland CJ!! So many places to try, i dont even know where to begin! Ox and Le Pigoen are the obvious choices and the food carts are really a quintessential Portland food experience. Hope you enjoy your stay here!

If that's how the other half eats, I'll stick with Spaghettios, thanks. Blech.

OMG! I saw you, Chef John. I saw you! You were driving on Portland Ave in a blue Volvo. The left headlight was missing and the rear bumper was held on with yellow plastic rope.

OMG!

wow! please tell me you're going to do a version of that rabbit eel terrine with the trimmings (that foie gras miso vinaigrette looks amazing) on your blog! Rabbit is such a nice meat if done well and cooked way too seldomly imho. Thanks for posting and greets from austria!

Foie Gras profieroles? Oh my. Looks like I need to make a pilgrimage to Le Pigeon. I've shied away from the crowds but this would be worth it.
